How to change sorting of a Single Select column?

I have a Single Select column with the options “Yes”, “Maybe”, “No”.

I want Yes to appear at the top, but when I sort, “Maybe” appears at the top.

if I rename “Maybe” to “Zaybe” and “Yes” to “Aes”, the “Zaybe” still appears above the “Aes” even though the text is in an alphabetical order that should make it sort properly.

Is there any way I can have single-select options sort by their name? How are they currently sorted? By creation date?
