iam looking only for the seatable single node instance without n8n as port of the installation (iam running n8n on another system)
is there a server or should i customize the yaml files by deleting the n8n part?

Simply follow these instructions: SeaTable Server - SeaTable Admin Manual
The basic setup does not include n8n (or any other optional components).
